GREEK PIE WITH LEEK AND CHEESE

INGREDIENTS:

10 leeks, cleaned and cut into rings

3 fresh onions or if it is not in season, 1 onion

A head of onion (meaning two in total)

3 eggs

3 spoons of flour

A cup of olive oil

A spoonful of finely chopped parsley

A spoonful of finely chopped mint (if you like)

A spoonful of finely chopped dill

300 gr. crumbled feta cheese

A little salt

A little pepper

6 thick crusts

PREPARATION:

in a deep pan, fry the leeks for a minute and drain. In the same pan, saute fresh onion and onion. As soon as it gets colored, add the leek and remove from the heat. Mix and add eggs and flour and then herbs as well as salt and pepper.

Heat the oven to 180 oC. Coat the pan with oil and spread three crusts coated with oil on the bottom. Pour over the prepared mixture and cover with other crusts also coated with oil. Cut into large cubes and pierce with a fork in several places. Spray with water and bake for about 50 minutes.
